Day 28: Chicken Amok, Khmer Pickled Vegetable Salad and Jasmine Rice

This dish is simply WOW. The best thing I have made so far from the 27 countries I have cooked. The flavour profile is spectacular.

If anyone feels like trying any of the recipes I have cooked so far, this is the one you should try. Even if you are vegan I highly recommend it. To create a vegan version I would suggest replacing the chicken with sweet potato and you are good to go. Can’t recommend this meal highly enough.

Red Beans and Bananas with Kachumbari and East African Chapati

Was pretty excited to try Burundi and it didn’t let me down. Burundi is a landlocked East African country, one of the poorest countries in the world. The average income in Burundi is about AUD$500 per year. So I really wanted to cook something which could be afforded by all Burundians not just a select few.

Red Beans and Bananas is an incredibly cheap and simple meal. Soaked kidney beans, onions, green bananas, chilli boiled in a stock.

Kachumbari an African slaw that is so simple and so delicious. Onions, tomatoes, cucumber, coriander and a squeeze of lemon juice.

Moving to the Chapati. I have to confess I am bit of a flatbread geek. I have been making my own naans, rotis and chapatis for years. I love making fresh flatbread.

East African Chapati is very different to Indian Chapati. It has a lot of oil in the mix, it is rolled out, covered in oil, rolled up, spiralled and rolled out again. The effect of doing this is the finished flatbread has about 6 paper thin layers inside it. It is flaky and amazing. I will be making this flatbread many times again.

Total cost of dinner was approximately $4 to feed 3 people with leftovers. Although the leftovers all disappeared throughout the night, not sure what happened there.

Burkanbe Peanut Stew and Riz Graz (fat rice)

Burkina Faso is a small landlocked country in western Africa. It’s one of the ten poorest countries in the world. The name literally means “land of honest men” in Mossi and apparently Burkanabe people are known for their integrity.

This was a very simple meal of simple ingredients but really good. I am loving the way West Africa uses peanuts and really hot Habanero chilli. A match made in heaven for the Peanut Stew recipe.

For the Riz Graz I used a black rice I had in the cupboard which on doing some research is apparently a lot like a locally grown and commonly eaten rice in Burkina Faso.

Kitchen World Tour Day 25: Bulgaria! Today I served Sarmi and Shopska Salad.

Sarmi are cabbage rolls stuffed with a meat mix, boiled in a stock. Definitely eastern European fair. Nice but probably 3 out of 5 for me, as I prefer more spice in my food. My eastern European wife was much more impressed. The Sarmi were accompanied by Bulgarian Shopska Salad.

We are entering a week of African countries. Next up: Burkina Faso
